The "sauce" was thin and flavorless, the pork chops tough and almost inedible. I totally agree with Rabdu from CO, this was awful! The worst recipe I've tried from Epicurious. Removed, added some chopped rosemary, reduced the sauce for about 5 or 6 minutes and served. I then cooked the pork chops about 13 minutes, turning once. I combined a lot of folks' advice and modified the recipe: browned the pork chop in the olive oil marinade on a dutch oven for about 3 minutes per side until lightly browned deglazed with a little wine added the butter and shallots cooked until almost lightly brown, added the rest of the ingredients with spicy mustard, but only put in about 1.5 cups of wine. There was nothing good about this recipe. It does not specify the thickness of the chops so maybe mine were too thin, but I don't think it would have mattered because you're still boiling them. I will use more caution before following another recipe from epicurious. 2 cups is way too much wine it drowned out the mustard. They were dry and flavourless after 10 min. Served sliced with mashed potatoes and steamed asparagus with butter and lemon zest.īoiling pork chops is a horrible idea.

Not sure why my brain agreed with going ahead with this recipe. OMG why didn't I read the reviews before making this. I don't where my train of thought was because there was no searing Maillard reaction so when I lifted the lid and saw grey chops I knew I was SCREWED Thank You I think I would thicken the juices next time to make it more of a sauce/gravy. I tossed the pork chops in my air fry oven for 10 mins to par cook them while sauteeing the scallots (I used onions) I used apple wine. I'm not sure why there are so many terrible reviews of this recipe, we loved it.
